Last night we experienced an amazing 9 course tasting menu created by chef Zach Keeshig who takes traditional aboriginal cuisine to a whole new level. The range of flavours and textures was brilliant and the presentation of each dish was nothing less than a work of art.
Judge for yourself — this dessert landscape composed of meringue mushrooms, chocolate twigs, crumbly, nutty soil, sponge cake lichen and edible flowers! Almost too beautiful to eat (which is why I took a photo and then devoured it).
